Pumpkins Are In Season!
Pumpkins are in season! Everywhere you look you see that hint of orange. Maybe this is the year to try something other than carving one or maybe you are looking for a new way to incorporate this healthy delicious vegetable. Here are a couple not so traditional pumpkin recipes to try:
Pumpkin Egg Nog
2 T butter
2 T coconut oil
2 T honey
1/4 t sea salt
1/2 t vanilla extract
1 t pumpkin pie spice
1/2 c pumpkin
2 c hot water
Sprinkle with ground cinnamon or nutmeg (optional)
Place all ingredients into a blender in the order shown and blend. Pour into a mug and sprinkle with your liking of cinnamon or nutmeg. Serves 2-3 enjoyable mugs full!

Pumpkin Pasta Sauce
3 large cloves of garlic
1/2 diced onion
1 1/2 c pumpkin purée
1 or more T chicken or vegetable stock or water
2 t fresh sage or rosemary
Sauté garlic cloves and onion in a large skillet until onions are clear. Add pumpkin purée and stir to combine. Add some stock if the pumpkin needs to be thinned out. Water will do in a pinch too. Mix in fresh herbs. Serve over quinoa, pasta, zucchini noddles of spaghetti squash.

Super Chocolate Pumpkin Brownies
1/4 c melted coconut oil
2/3 c unsweetened cocoa
1 c rolled oats-blend into a flour-like consistency
1/4 t baking powder
1/4 t salt
3/4 c coconut sugar
2/3 c pumpkin purée
1 egg (or equivalent egg replacement)
1 1/2 t vanilla
A couple of handfuls of pecans and/or chocolate chips (optional)
Set oven to 350 and oil a square baking dish. Mix oil and cocoa together in a small bowl. Combine oats, baking powder and salt together. In a separate bowl, whisk sugar, pumpkin, egg, and vanilla. Add the oil/cocoa combo and mix well. Pour in remaining dry ingredients and stir. Follow with nuts and chocolate chips. Mix again and transfer into a pan. Bake 25 minutes and enjoy!
